Tex-Mex Pork Stew

Pork is an often overlooked alternative to beef and chicken that is versatile, inexpensive, and complements flavors generously. This is a simple, adaptable stew recipe that can be used for tacos, burritos or eaten as a chili with your favorite fixin's.

Ingredients: 2 lbs. cubed pork (1/4-1/2" cubes), onion, carrots, parsnip, mushrooms, rutabaga - it's between you and your grocer. 1 pack Tutti Tex-Mex Mix, 1/4 cup all purpose flour, 1 bay leaf. 2 cups chicken stock, 1 cup white wine to deglaze the pot.

Combine flour and 2 Tbps Tutti Tex-Mex Mix in bowl. Dredge pork cubes in flour mix and brown in oil over medium temperature. When evenly cooked, add chopped vegetables and chicken stock and bring to boil. Reduce to simmer and cook for 1-2 hours to desired consistency. Use white wine to deglaze the pan, stirring thoroughly from the bottom of the pot before serving.
